We’ve dedicated this page to you our customers, our staff, and our wider community because you deserve to know where your coffee comes from.
At GAIA COFFEE, it’s our responsibility to make sure every bean we serve is sourced with purpose. That means supporting single farms, fair pay, and ethical relationships at every step of the journey.
That’s why we’ve partnered with Monmouth Coffee Company, a London-based roaster known for their transparent, people-first approach to sourcing.
Grown with Care, Not Just Bought
Monmouth works directly with single farms, estates, and cooperatives.
They don’t rely on brokers or middlemen. Instead, they meet growers face to face — learning about their land, methods, and challenges.
They pay well above commodity prices and build long-term partnerships based on trust and sustainability.
This means the coffee we serve at GAIA is:
– Traceable to the farm, region, or cooperative
– Grown without harmful chemicals
– Roasted in London to highlight each origin’s natural flavour
– Sourced seasonally, responsibly, and with purpose
Origins You Can Taste
Our coffee rotates throughout the year, based on harvest seasons and availability.
We currently source from thoughtful producers across:
– Colombia
– Rwanda
– Peru
– Honduras
– Kenya
Roasted in London, Since 1978
Monmouth began roasting in Covent Garden and now roasts from five converted arches at Spa Terminus in Bermondsey.
Their Loring roasters from California combine innovation with energy-efficient design.
It’s a process rooted in craft, care, and sustainability.
Why This Matters at GAIA
When you choose GAIA COFFEE, you're supporting a global chain of care from the farmers who grow our beans, to the team that serves them, to the community we’re building here in East London.
Because good coffee should do good for people, planet, and future generations.
