We believe coffee can be a catalyst for connection, opportunity, and change.
GAIA was created to open space for local people to thrive: from free barista training to grassroots youth support and creative collaboration.
Our mission is to build something meaningful, one cup at a time starting here in East London.
GAIA is built on sustainability, inclusion, and intention. We proudly serve fair trade coffee, support women and young people, and partner with local organisations to create lasting impact.
We reinvest at least 10% of our future profits into grassroots causes from youth programmes to mental wellbeing and community-led initiatives.
Born in Bethnal Green and Shoreditch, GAIA is my way of giving back to the community that raised me.

Our seasonal menu features vibrant brunch bowls, fresh pastries, and specialty drinks made with high-quality, conscious ingredients. From nourishing brunch to matcha lattes and expertly brewed espresso, every item is crafted with flavour, balance, and sustainability in mind.

We proudly serve Monmouth Coffee — ethically sourced, fair trade, and fully traceable. Each roast supports small farms and cooperatives in Colombia, Kenya, Brazil, and Guatemala, championing fair pricing, sustainable farming, and responsible sourcing.

At GAIA COFFEE, sustainability guides every decision — from the materials we use to how we train our team. Our mission is to reduce waste, respect the planet, and uplift the people in it.
Before opening, we partnered with ReLondon and Tower Hamlets Council to build a circular approach to coffee rethinking resources, training, and daily operations.
Our team will be trained in ethical sourcing, low-waste practices, and recycling, ensuring GAIA launches with real care for both people and planet.
